Liz's Jambalaya


3 lbs chicken
I cup flour (Sorgum flour if glutten free is required)
I tablespoon salt
Shake in a bag and fry in ¼ cup olive oil.


1 lb Andoulle sausage


Mix
4 small bay leaves
¾ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon black pepper
½ teaspoon thyme
1 teaspoon white pepper
1 teaspoon salt
1 teaspoon dry mustard
4 tablespoons margarine
1 ½ cups chopped onions
1 ½ cups chopped celery
1 cup chopped green bell peppers
1 ½ teaspoons garlic
1 can tomatoes
2 cups washed rice
4 cups chicken stock


1. Stew the meat
2. Add seasoning - stir well until browned (10-12 minutes)
3. Add rice and cook about 20 minutes.
