Italian Corn Bread

 

Ingredients

2 Cups water
1 Teaspoon of salt
1 Cup Corn Meal
1 Stick butter (1/2 cup)
3 Eggs
1 Yeast cake
1/2 Cup sugar

Preparation

Bring water to a boil. Wet the corn meal first, so it will not stick together when you put it into the boiling water.
Cook slowly for just about one minute. Let it cool. Then put three eggs and one yeast cake that has been melted in a little warm water together with 1/2 cup sugar
and as much white flour as you need to "work with your hands."

Let it rise in place, or place in bread pans and let it rise in pans. Bake in a 350 degree oven until done, about twenty minutes, or more.

Serve

Serve in traditional corn bread situations, only this one is better.
