Carrot Suffle
3 lbs. carrots boiled and well-drained. ( I use the mini, already peeled)
3 cups sugar
1 tbl baking powder
l tbl. vanilla
3/4 cup flour
1 1l2 sticks butter, melted
6 eggs
1. Mix all ingredients in food processor or mixer until smooth.
2. Pour into greased 9 X 13 inch pan.
3. Bake at 350 degrees for 1 hour.
